2007 Agrapart Champagne Grand Cru Experience BdB Brut Nature
Det här var tydligen ett väldigt speciellt vin:
Oerhört friskt, tight, stramt, mineraliskt, energiskt, elegant. I doften citrus, blommig, väldigt lite autolytiska noter. I smaken citrus och gröna vindruvor. Inget stort djup och ingen lång finish. Kom aldrig riktigt loss kändes det som. Men en väldigt spännande champagne med en oerhörd nerv i sig. Behöver mer tid (?) och mycket mer luft än vad det fick under denna lunch.

Vinet består alltså av cirka 80% vin från 2007 blandat med 20% druvmust från 2008. Ganska lite mousse. Vet ej när det degorgerades.“ … it is a wine that is totally unique in the world of Champagne …The story goes something like this... in 2002 Agrapart sought and (remarkably) received permission from the local authorities to begin experimenting with a wine that would be produced without any additions at all, including no addition of liqueur de tirage or liqueur d'expédition. That is to say, no sugar has been added at all, even for the second fermentation. In its place, Agrapart received permission to use natural must (grape juice) from his own vineyards as the liqueur de tirage to bring on the second fermentation, enabling him to produce a Champagne that was solely the product of grapes. No one knows how Agrapart managed to get this permission and he just smiles when he is pressed on this question. He is clearly a man of significant charm and persuasive powers. This rare Champagne is the result of the five years of trials that followed. It's an equal blend of the 2007 wines that went into the Avizoise and Minéral cuvées of this vintage, "dosed" with the juice of 2008 (20 per cent) from the same vineyards, to kick-start the secondary fermentation in bottle. There was also no yeast additions for either fermentation and the wine was not fined or filtered. There was obviously a lot of trial and error and the 2007 is the first ever release. It's a fascinating, unique wine, and a wine of historical significance.”
"Most Champagne" Agrapart told us "is 95% juice, and 5% other things: water, sugar, sulfur, and yeast." With this wine, the aim is to make a Champagne that is 100% "jus de raisin," which requires a second fermentation using cellar yeast and must from the current vintage rather than the sugar and neutral yeast combination used to create bubbles in virtually every other Champagne under the sun. This is the fifth time Agrapart has made this cuvée, and it's the first time he's been allowed to label it as "Champagne" because in every other edition, the CIVC (Champagne's regulating body) did not deem it Champagne-like enough to earn appellation status.”
